Honey Soy Flank Steak & Parmesan-Rosemary Potatoes

This was just a good simple grilled dinner. I was really pleased with my marinade and the idea of the potatoes was great - I just need to improve the execution. I realized I had a mandolin sitting in my cabinet that I had never touched, and it was time to break it out. I can see it being helpful in the future.


Honey Soy Flank Steak
3/4 cup low-sodium soy sauce
1/2 cup honey
3 cloves minced garlic
ground ginger to taste
2 tbsp dijon mustard

Whisk ingredients together. Let flank steak marinate in refrigerator for more than 2 hours (I did this one for 6 hours). Grill to desired temperature and enjoy.



Parmesan Rosemary Potatoes
3-4 large white potatoes, sliced with the crinkle cut attachment of a mandolin
shredded parmesan cheese
3 springs fresh rosemary
olive oil
salt & pepper to taste

Heat olive oil in a pan. Add one sprig rosemary, salt & pepper.
Fry potato slices to desired crispiness. Place slices on a tray and sprinkle with cheese and another sprig of rosemary. Broil for 5 minutes or until cheese is hot and bubbly. Garnish with rosemary.
